A new culinary master has taken charge at L'Amphitryon.
Jeffrey Pestana, who honed his skills in prestigious establishments such as the Michelin-starred Grand Monarque and Eden Rock in Saint Barthélemy, has returned to France to bring his talents to L'Amphitryon.
At 30, Jeffrey describes his cuisine as deeply rooted in the French gastronomy of Escoffier. His love for cooking was sparked by his mother and paternal grandmother, who instilled in him a passion for fine ingredients and a deep desire to create dishes meant to be savored.
Committed to sourcing locally, Jeffrey places great emphasis on using regional products in his recipes. The decision to helm the kitchen at L'Amphitryon felt natural to him. The cuisine at Château Louise de La Vallière reflects the culinary traditions of the Grand Siècle, fit for royal tables.
Jeffrey fully embraces this rich legacy, making it his own.
